Marion Chocolate Peppermint Chia Seed Pudding




Get festive with your chocolate chia seed pudding and add some peppermint extract for the perfect healthy holiday dessert!

Chia seed pudding is one of those desserts that I wish I always had on hand, but never make. Why is beyond me because it’s the easiest thing in the world to make! You literally whisk everything together and let the chia seeds do their thang in the fridge and viola, you have a healthy dessert that tastes JUST LIKE the real thing.

Every time Linley and I test for Fit Foodie (this recipe included), we turn to each other and say something like – “OMG THIS ACTUALLY TASTES REALLY GOOD.” You would think by now it would be a give in that everything we make is going to taste delicious (:D), but we continue to surprise ourselves. I have to keep reminding myself that just because I didn’t go to school to be a trained chef…I’m still a damn good cook! And Lin is too!

So, this chia seed pudding is epic. We took our classic chia seed pudding recipe and made it festive with some peppermint extract and it’s just delicious. I highly recommend finding some crushed peppermint (or just crushing up some candy canes), to make it look extra holiday.

Uh- anyone else obsessed with candy canes? It’s one of my favorite parts of the holiday season and I am totally that weirdo that stocks up when they all get marked down at Target the day after Christmas.
