Kiesha Easy Family Friendly Protein Pancakes or Waffles

Some of my favorite ways to eat eggs include a runny egg over avocado toast, muffin recipes, omelets, meatloaf, as an egg wash or egg salad for lunch, but my #1 is a good protein pancake.

I used to have one every day for breakfast. Then I had Tommy and didn’t think I had the time. When he began to eat solids, I started making him baby protein pancakes and myself regular ones. I’ve since graduated to making us the same recipe. I actually make waffles instead of pancakes with the same recipe because the clean up time is quicker for me. There are so many variations for this recipe but the base is the same. Add blueberries, chocolate chips, coconut, cinnamon, whatever your heart desires.

All you really need are three ingredients eggs, banana or apple sauce and oats. If you have baby oatmeal left over from the early days, you can use that in place of the oats, too!

The waffle maker that I use is the $10-15 Dash Mini Waffle Maker.

Easy Family Friendly Protein Pancakes/Waffles

Makes 2 adult sized servings, 6 small waffles or pancakes

  • 1 Egg
  • 1 Ripe Banana (alternative is 5 oz apple sauce or 1 squeeze pouch)
  • 1/2 cup Oats, Old Fashioned or cooked Steel Cut (if using baby oatmeal use 1/4 cup + 2 tbsp)
  • 1/2 tbsp Flaxseed (optional)

Preheat a lightly greased skillet or waffle iron. Mash banana Combine all ingredients until well blended together. Scoop about 2-4 tbsp of batter into skillet or waffle iron. Cook about 3-4 minutes on each side or until a golden brown. If using a waffle maker, it will take about 5 minutes or less, again, depending on your appliance.

My favorite way to enjoy protein pancakes is to add peanut butter and berries on top! You can also store extra waffles and save for a snack later in the day. This is a great post workout treat!

If you’re looking to lose weight and haven’t added protein to your breakfast yet you really should. Studies have shown that eating protein at breakfast can help satiny the appetite and reduce calorie intake for the rest of the day!
